Masterpiece

Flour

Flour plays a significant role in cookies because depending on its ratio, it helps the cookie stay its normal circle cookie form. Without it, it would just spread all over your baking sheet creating a big mess. Flour can make cookies chewy, crisp, or even crumbly. A substitute for flour are whole-grain flour which imparts a much healthier, and nutier flavor.

Sugar

Aside from adding sweetness, specifically white sugar helps the cookies spread resulting into a thin and crispy cookie. Brown sugar also plays a huge role in cookies because of the molasses. The molasses adds moisture because it's a slightly acidic, this causes the proteins in cookie dough to firm up faster, creating a chewier texture. Substitutes you can use are coconut-sugar, and honey for a more healthier, and cleaner cookie. 

Butter

Butter is important in a cookie recipe. When mixed into flour, fat coats some of the flour and protects it from the liquid. This process prevents from gluten developing, thus making the cookies more tender and not too overly chewy. Butter also contributes flavor. Substitutes for butter are margarine, coconut canola or olive oil.

Eggs

Eggs have protein and give moisture to a cookie. The liquid in eggs gives a cookie structure. Protein helps make cookies chewy. Substitutes for eggs can be applesauce and bananas.

Salt

Salt adds flavor Because we have sugar in this recipe we need salt to even it out creating a balance to the cookie. Salt also strengthen the protein in a dough, making cookies chewier. There are no substitutes for salt.

Leavens

In your traditional cookie recipe it calls for baking soda or baking powder. The difference in these two are baking soda is sodium-bicarbonate and when you heat sodium-bicarbonate you get something called sodium-carbonate which is a soapy, bitter taste and to balance that out you will need a acid. But if you are just using baking powder the acid is already in there so you're good to go.

STANDING ON THE SHOULDERS OF GIANTS

     Today I read some previous masterpieces and I learned quite a few things. I learned about space, and planets in our solar systems. We were given some interesting facts like how NASA plans to send people to Mars in 2030. I also read about bullying, the ocean, technology and a person's career plan . I love the ocean and the Bermuda triangle just fascinated me. I didn't know there was such thing. At the end of the ocean presentation there was this photo of a shark and I didn't realize how HUGE they were and how we are a snail compared to a shark. But I enjoyed reading these presentations and what I got from it is for me it was easier reading a presentation and they had photos. I thought that is something I should do next time.

THREE JORUNALS

     I've been in this OSLA program since January so I know the basics, and how things roll here so that qualifies me to give insights and advice to whomever is considering joining the Open-Source Learning Academy for 2021-22. Here is why I love and recommend this program, you have the freedom of learning anything and everything, For example, I am working on my masterpiece (a at the end of the semester project with some information about certain things) which is going to be about the nutrition label, and baking. I had to walk about eight miles to deliver some cookies which was unexpected but this became part of my story. I can share this with my peers and give them some information about the benefits of walking. So there is really just a freedom of learning what you want to learn, and learning about other people's learning. Instead of focusing on a certain unit we can focus on simply learning.


    I have a lot on my mind. I am excited, frightened, tired. I am constantly thinking about school and what I plan to do in my future, there's never a time where I don't think about my future and that scared me. Just last night I woke up to get a glass of water and when I was returning back to my bed I asked myself that same question that I simply just cannot answer which is, "What is your plan? What are you going to do?" I am trying to get through each day, one day at a time. But I also think about my masterpiece constantly. I have this expectation and it seems perfect and exciting I just don't know how to do it but I want to I just don't know if there is going to be enough time because my masterpiece is going to be due on Wednesday.


For cleaning no one ever is truly finished. There is always something that needs to be cleaned to be spotless. In a relationship, the moment the other person says its over, its over. The feelings however still may be there. But when you don't feel anything about that person, no excitement, no anger, no regret, no guilt, no sadness, no attractiveness then it's truly over and you've moved on.

KEEPING AN OPEN MIND

 Today May 20 we discussed a lot. We were able to ask Dr. Preston a question on everything and anything. I asked him questions related to college, money, and life advice. He gave us the advice to be careful as to whom you spend the rest of your life with. He also told us about how we got accepted into Berkley and waitlisted into Stanford and why he attended UCLA. He did not know exactly what he wanted to major in because he wanted to major in everything. He told us the difference between a credit card and a debit card, and how credit is a card you can spend money on whatever but the amount of money you don't have on your card you will need to pay later and soon because  they can cost you interest. A debit card is a card you have with a certain amount of money but you cannot surpass that amount, you can't buy something greater in value than what you have in your card because it will decline your card.

THREE JOURNALS

     "Yeah, I know that guy" is used a lot in todays society. But what does it actually mean? This all depends of the person, but here's my definition of "knowing that guy". When I know that guy I at least know his/her name. I never claim to "know" a person just because I saw them one time in my class. When you know a person it's because you know something a stranger wouldn't know. If I am really close to the person I'd say something like this "Yeah, I know that guy, we are good friends" This explains that I actually KNOW KNOW the person.

    Time stresses me out. I think about several times where I needed things ready and done whether it be a cake that I wanted to bring or getting ready to go someplace. When I was younger I didn't have to worry about those types of stuff, I never had stress when I was younger but now I practically experience it everyday. 

END GAME

     This week I plan to have all the information on a nutrition label, and the science behind baking, such as what elements can change what in a dessert. I plan to have my cookies baked and done. Hopefully, I can deliver them before Tuesday. To be able to receive feedback as soon as possible. I plan to make a google form to get that feedback on Tuesday. I plan to make a video on my topics, I feel like it's faster, and I don't have to worry about grammar as much as I would have on writing. I want to record on Thursday and have it done edited on Friday.

YEAH I KNOW

 I will know whether or not my masterpiece gave all the information needed by asking them questions about it. It's not a quiz to see how much you weren't paying attention nor that you didn't get it but rather it gives me the feedback I need, to see how well I gave the information out. 

HOW I'LL KNOW YOU KNOW WHAT I KNOW

 10 questions the reader should be able to answer:

- Where do carbs come from?

-What good are healthy fats for?

-What is the difference between saturated fats and trans fats?

-What are examples of healthy sugar?

-What happens when you consume too much sodium in your lifetime?

-Why are proteins necessary?

-What is a calorie?

-What are carbohydrates?

- What happens if you don't take your carbs?

-What happens if you take too much sugar in your lifetime?

THREE JOURNALS

 I think the school board's decision was wrong. There are thousands of students going to school and it's not a humongous campus neither for everyone to maintain six-foot distance. I just wonder why they made this decision, obviously people still have to wear mask and maintain distance so its still not 100% safe. People are still at risk and there are a lot of students who act like four-year olds and don't care about the rules.

CURRENCY FOR PAYING ATTENTION

     The definition of cognitive dissonance is the mental discomfort experienced by a person who holds two or more beliefs, ideas, or values. An example of this is a lawyer who has to defend a client whom she/he thinks is actually guilty. Another example of this is the fable of  "The Fox and the Grapes" by Aesop. A fox spies high-hanging grapes and desires to eat them. He is unable to reach the grapes so he convinces himself that the grapes are not worth eating and he justifies his decision, claiming to himself, that the grapes are likely sour and unripe. This story is illustrated in a way where it indicates that: When a person desires something and finds it unattainable, he/she diminishes it by criticizing the object of desire as worthless.

THREE JOURNALS

     The pros of rain are it can be very relaxing. I see videos of rain falling on the floor and it has millions of views because of the effect it can have on people. The plants also love the rain, and I love the rain for the plants as well. When there is misty, beautiful rain it's one of the best feelings there is. The cons of rain is it gets wet. Getting wet when you are not showering or at the beach is very frustrating because there is a possibility of stepping in a puddle of rain and feeling disgusting. It also gets very cold especially when you aren't prepared for it. But other than that, the rain is not annoying to me. I like to cuddle up in a blanket and drink something warm like a tea, or chocolate. 

    How am I today? That is a great question. I am ok, although I have problems that I cannot stop think about. I am thankful for what I have though, and when you are thankful you are happy. Yesterday was a great, PERFECT may I say, day. I loved it, I was the happiest but that was yesterday. There are problems that occurred today such as, my mom thinks I lost her "expensive" earbuds, my mom found out I have my phone back when she took it away, my internet decided to stop working right when I was goin to work on my assignments, and my mom also went through all my stuff and found that I have supplements for weight loss that she forbid me to take. But other than that I am GREAT. I feel amazing, and I'm ready for a great week ahead of me.

    Home is wherever you come to at the end of the day. It's where you can sleep and feel safe. A home can be an actual house, trailer, or even your car. There doesn't have to be any people living with you necessarily. A home is where you change, get ready, eat, bath, and sleep.
